Ingredients:
- 2 cups shredded chicken tossed in ½ cup low sugar BBQ sauce
- 2 cups shredded cabbage
- 1 cup fresh or frozen corn (defrosted)
- 1 cup canned black beans (drained and rinsed)
- 1 cup cooked rice of choice
- 2 green onions, sliced thin
- 1 avocado, sliced
- 4 tablespoons low-sugar BBQ sauce
Optional: add any additional desired vegetables, such as fresh cherry tomatoes, or pickled red onion, sliced radish, or low-fat salad dressing/sauce
Steps:
Divide the rice, beans, corn, cabbage, and chicken evenly among four bowls. Top with green onion, sliced avocado, and drizzle with BBQ sauce. Add any additional toppings if desired. Recipe serves 4-6.
