Balanced Meals Made Out of Thanksgiving Leftover

Homemade Protein Bars

Ingredients:

  • 1 ¾ cups old fashioned oats
  • ¾ cup peanut butter or other nut butter
  • 1 banana, mashed
  • ¼ cup honey or maple syrup
  • ½ cup ground flax
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 1 cup protein powder
  • Optional: handful of no sugar added chocolate chips, unsweetened dried fruit, chopped dates, chopped nuts

Steps:

  1. Mix all ingredients until well incorporated.
  2. Place mixture into an 11x7 pan and press down.
  3. Refrigerate for 1-2 hours or until firm.
  4. Store in a container in the refrigerator for up to 2 weeks. You can also freeze bars for up to 3 months.
