Protein Pumpkin Bread:
INGREDIENTS:
½ cup rolled oats
¾ cup coconut flour
120 grams protein powder (~4 scoops), vanilla flavor is best
4 tbsp ground flax
⅓ cup sweetener of choice
2 tsp vanilla extract
1 egg
2 tsp pumpkin pie spice
2 tsp cinnamon
2 cups pumpkin puree- not pumpkin pie filling
¼ cup unsweetened applesauce
6 tbsp liquid egg whites
1 tsp baking soda
1 tbsp baking powder
STEPS:
- Preheat oven to 325F.
- Combine ingredients in food processor. Process until smooth.
- Use cooking spray to coat 2 bread pans.
- Divide batter into 2 pans and bake for 25-30 minutes or until toothpick comes out clean.
- Optional: can top bread with chocolate chips, low-fat cream cheese, or an extra sprinkle of cinnamon/pumpkin pie spice.
